Sweet Tzimmes with Carrots and Dried Fruit
A traditional Ashkenazi sweet stew of carrots, sweet potatoes, and dried fruit served on Rosh Hashana and other holidays for a sweet new year.

Preheat oven to 375°F.

Peel and cut carrots and sweet potatoes into chunks.

In a large baking dish, combine carrots, sweet potatoes, and dried apricots.

Whisk together honey, orange juice, cinnamon, and a pinch of salt.

Pour honey mixture over vegetables and toss to coat.

Cover with foil and bake 30 minutes.

Remove foil, stir, and bake uncovered another 15 minutes until caramelized.

Taste and adjust sweetness.

Garnish with toasted slivered almonds.

- 2 sweet potatoes, peeled and cubed
- 1/2 cup dried apricots
- 1/4 cup raisins
- 3 tablespoons honey
- 1/2 cup orange juice
- 1 teaspoon cinnamon
- Pinch of salt
- Slivered almonds to garnish
