Classic Matzo Brei
The quintessential Passover breakfast — softened matzo fried with eggs. Simple, nostalgic, and delicious. Can be made sweet or savory.

Break the matzo into rough pieces and soak in warm water for 2-3 minutes.

Drain thoroughly and squeeze out excess water.

Beat the eggs with salt and pepper, then mix in the softened matzo.

Heat oil or butter substitute in a large skillet over medium heat.

Pour in the matzo-egg mixture and press flat.

Cook until golden brown on bottom, about 4 minutes.

Flip and cook other side until golden.
